Apple Cinnamon Oatmeal Cookies

I was having an afternoon tea with some of my most favourite ladies, and one's two year old daughter, so I decided to make a "healthier" cookie choice! This recipe is a variation from Joy the Baker (who is hilarious and awesome).

Apple Cinnamon Oatmeal Cookies

1/2 cup (1 stick) unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 tsp vanilla extract
1 ¼ cup all-purpose flour
1 1/4 cup oats, old fashioned or quick cooking
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
generous pinch nutmeg and cardamom
1/2 cup flax seeds
1 medium apple, peeled, diced small
1 teaspoon fresh lemon juice

Place a rack in the upper third of the oven and preheat to 350 degrees F.  Line two baking sheets with parchment paper and set aside.  

Peel and dice the apple and toss with lemon juice.  Set aside.  

Beat the sugar and butter in the bowl until creamy. Add egg and vanilla and mix until combined.

Whisk together the oats, flour, baking powder, baking soda, spices and salt.  Add to the butter and egg mixture slowly mixing until just incorporated.  Stir in the flax seeds and apple chunks last. The mixture will be sticky, but should be thick and sticky like biscuit dough. 

Drop 1/2 inch balls on the baking sheets. Bake for 10 to 13 minutes.  

They were a big hit with the little one (they are a little crumbly so they would break into perfect 2 year old bites), and the ladies liked them as well. 

I also made the girls these little herb bouquets to take home with some extra cookies!
