Huevos Rancheros

It's the long weekend here so I decided that this called for a fancy breakfasts! I decided that I'd give Huevos Rancheros a try on Sunday and they turned out great (especially because I made the "salsa" from scratch). What also turned out really well is the photo - Nick got an SLR this week so my food will hopefully be properly photographed from now on!

Huevos Rancheros

2 - 4 tortillas
1 Tbsp olive oil
1 medium white onion, diced
2 garlic cloves, minced
1 large can of diced tomatoes, drained
2 tsp salsa spice mix (or this can be substituted for a jalapeno minced, a pinch of red pepper flakes, salt, pepper, and cumin)
1/4 cilantro, roughly chopped
4 eggs
1 cup grated cheese
3 green onions, sliced
sour cream

 Heat your frying pan to medium and place the lightly oiled tortillas in to fry (one at a time) until slightly crispy. Place on a plate and cover with tin foil to keep warm.

Add the oil to the pan, and saute the onions and garlic until soft. Add the diced tomatoes, salsa spice mix and cilantro and cook for 10 minutes on medium low heat. Note: heating up jarred salsa is an alternative if you don't want to make this delicious tomato mixture from scratch, but a high salt one - hello high blood pressure!

Add the eggs right on top of the salsa and cover with a lid. Cook for 5 minutes or until your liking (soft poached is best).

Spoon the eggs and salsa on top of the tortillas, then cover with cheese, green onions and sour cream. Dig in to your morning fiesta!
