Breakfast Mousse
I adapted this recipe from a friend for a Breakfast For Dinner Birthday Party. It's a different twist on breakfast that goes great with fruit, cinnamon buns, or granola.
Breakfast Mousse
1 Avocado
2 Bananas
2 Tbsp Cocoa powder
1 Tbsp Honey
2 Tbsp Flax seeds
1/2 Can of Coconut Milk
1 cup whipping cream
3 Tbsp sugar
1 tsp vanilla
In a blender, mix first 6 ingredients on the highest setting for about 1 minute or so. In a mixer, whip cream until soft peaks form, then add sugar and vanilla and mix until stiff peaks form.
Fold the chocolate mixture slowly into the whipping cream. Then place in a serving dish and leave in the fridge for at minimum an hour, so that it can set.
Note: The original recipe didn't have whipping cream, just a whole can of coconut milk, which is perfectly fine - it's just more soupy then moussey.
