Mushroom Stuffing Stuffed Pork Chops


I'm always trying to think of new ways to cook pork chops so I thought I kinda just put this together. The stuffing is great and would go well with any meal (and this is coming from a person who normally does not like stuffing). I would say you only need about a 1/2 cup of stuffing per pork chop but of course it's nice to have extra stuffing to eat as a side as well.

Mushroom Stuffing for Stuffed Pork Chops
 
1/3 cup onion, minced
2 garlic cloves, minced 
1/2 cup mushrooms, minced
1 cup butter or margarine
6 cups french bread, cubed
2 tsp salt
1 tsp basil
1 tsp oregano
1 tsp sage
1 tsp thyme
1/2 tsp pepper

In large skillet, melt butter and add onions, garlic, and mushrooms. Cook until onions are translucent and mushrooms are soft. Add bread cubes and all the seasoning. Mix until cubes are well coated and begin to soften. 

Butterfly the pork chops and place stuffing in each pork chop. Place the pork chops in a baking dish and put remaining stuffing on and around the pork. Place in a 400 degree F oven for approximately 20 minutes, or until the meat is cooked through.
