Ginger Apple Pork Roast

I've seen a lot of recipes that combine pork and apples, so I thought I'd give it a go. The results were pretty good actually - spicy and flavourful and not too sweet. I also made gravy with the drippings to enhance the flavours of the meat.

Ginger Apple Pork

1/2 onion, chopped
3 garlic Cloves
1/2 cup fresh ginger, chopped
3 apples, peeled, cored, and chopped
2 cups beef broth
1 Tbsp cinnamon
salt and pepper to taste
1 pork loin roast

Place half of onion, garlic, ginger, and apples in crock pot.

Pat the pork dry and rub cinnamon, salt and pepper onto meat. Place in crock pot.

Top with the rest of the onion, garlic, ginger and apple. Add beef broth just the meat is covered half way.

Cook on low for 8 hours.

Serve with masked potatoes, and gravy. Mmm Mmm.
