Here is my simple version of a traditional Cobb Salad.
Cobb Salad
Salad Fixings
1 head of iceberg lettuce, shredded
2 hard boiled eggs, sliced*
1 baby cucumber, sliced
2 roma tomatoes, diced
2 avocados, diced (I put just a bit on lemon juice on them to keep them from turning brown)
1 cup of marble cheese, cubed
2 small chicken breasts, cooked and diced
6 slices of thick bacon, fried and diced
Place the lettuce in the bottom of the bowl. Layer the rest of the ingredients in rows on top! Voila, how simple is that!?
I also made a really easy dressing to go with it!
Basic Cobb Salad Dressing
1/3 cup red-wine vinegar
1 tablespoon Dijon-style mustard
1-2 teaspoons sugar
Salt and pepper
2/3 cup olive oil
Mix ingredient until combined, pour over salad!
The great thing about Cobb Salad is you can add whatever your favourite salad fixings are (beets, blue cheese, carrot...) and it'll turn out great!
* Here is my foolproof way in which to hard boil and egg: Place your eggs in a pot and cover with water. Bring to a boil, then turn the heat to high-medium (7) and let cook for 10 minutes. Once cooked immediately place in cold water and let sit for 5 minutes. Peel and eat!
