Zimmer (Poached Eggs with Mushrooms, Avocado and Cheese Sauce)

When we were in Vancouver, our friend Alison took us to a great breakfast place called Paul's Place Omelettery. When I couldn't decide what to order they suggested the Zimmer. It turned out to be fantastic so here's my recipe for replicating it at home.

Zimmer

2 poached eggs
1/4 cup of mushrooms sauteed in butter and garlic
1/2 avacado, sliced thinly
small handful of alfalfa sprouts
2 pieces of rye bread toast (whatever bread you have is fine, but something thick and flavourful is best)
1/4 cup of cheese sauce*
salt and pepper to taste

Assemble the Zimmer by placing the sauteed mushrooms and avocado on the toast. Top with the sprouts and poached egg. Cover with cheese sauce! Add a pinch of salt and pepper if you like.

It's a nice lighter feeling, but still filling breakfast that will really impress whoever is eating with you!



* Cheese Sauce

Here is my recipe for a standard cheese sauce that is great for steamed veggies as well as on breakfast!

1 tbsp butter
2 tbsp flour
1 cup milk
2 cups sharp cheddar cheese
1/2 tsp Dijon mustard
salt and pepper

In a small saucepan melt butter. Add flour and mix to make a paste. Let the paste cook and darken for a few minutes.

Add the milk and whisk over medium heat until the sauce starts to thicken. Add the cheese, mustard, salt and pepper and mix in until the cheese is melted and everything is combined.
