Potato Gnocchi
I've been craving Gnocchi for a while now, but none of the grocery stores in our neighbourhood seem to sell it (I even checked the fresh pasta stand at the farmer's market and they don't sell it either). So I made my own using a recipe is from Giada De Laurentiis:
Potato Gnocchi
2 baking potatoes
1 egg, lightly beaten
1 tsp salt
1/2 tsp freshly ground pepper
3/4 cup flour
Bake the potatoes in the oven for an hour at 350 degrees F. Once out of the oven let them cool slightly. While still warm, cut them in half and scoop out the potato, discarding the skin. Mash the potatoes well (this is really important if you want soft fluffy gnocchi, any potato chunks make the dough chunky and not as pleasant). Stir in the egg, salt, and pepper. Add the flour and mix until just blended.
Scoop out some dough onto a floured surface and roll the scoop into a 1/2 inch diameter rope. Make cuts every inch and round each slightly. Set the gnocchi on a floured baking sheet until you're going to cook them - it'll make roughly 50.
To cook them, just bring a pot of salted water to a boil, then drop them in. They'll be done in 3 minutes or so, but you'll be able to tell when they are ready, because they will float to the top.
I served mine with butter and LOTS of thyme (my favourite herb).

linds! you have no idea how happy i am you posted this. ive always wanted to make them but i thought it would be a lengthy process.
ReplyDeletethis is such a great simple recipe and i loved it! i had grated too much parm cheese for my pesto sauce i was making so i threw just over a handful of the cheese into my dough and it worked out well!! i was such a fatty after but i loved every second of it.
