THIS RECIPE when I make Jambalaya (the spice mix is amazing).
Friends Casper and Amanda follow the Paleo diet, so on their advice I replaced the rice with chopped up cauliflower (I used a whole head) and used only 1 cup of stock (cauliflower doesn't need to absorb liquid the way rice does so unless you want soup use a lot less)! It's a lot lighter and fresher - a really good alternative!
