Banana Chip Bread
This is my standby recipe for all the over-ripe bananas that end up in my freezer until there is space for nothing else! It comes from an old Company's Coming cookbook my mom owns and is what my siblings and I grew up eating. It's always dense with lots of dark flecks, and very moist.
Banana Chip Bread
1/2 cup Butter or Margarine
1 cup Granulated Sugar
2 Eggs
1 cup Mashed Very Ripe Bananas (approx 3 bananas)
1 3/4 cup flour
1 tsp Baking Soda
1/2 tsp Baking Powder
1/2 tsp Salt
3/4 cups Chocolate Chips
Cream butter and sugar together. Beat in eggs one at a time, until smooth. Add mashed bananas and blend in.
In second bowl, stir flour with baking soda, baking powder, and salt. Add banana mixture and stir until moistened. Add chocolate chips and fold in.
Transfer to a loaf pan and bake at 350 degrees F for about an hour until a inserted toothpick comes out clean.
It's great for breakfast, or for a snack, or for any time really - it's that good!
