Cinnamon Ice Cream
I just love my ice cream maker attachment for my kitchen aide mixer. This weekend I decided to make cinnamon ice cream and it turned out unbelievable! I don't know if I'll ever go back to store bought ice cream again.
Cinnamon Ice Cream
2 1/2 cups half and half
8 egg yolks
1 cup sugar
2 1/2 cups whipping cream
2 tsp vanilla
4 tbsp cinnamon
1/8 tsp salt
In a medium saucepan over medium heat, heat the half and half until very hot but not boiling, stirring often. Remove from heat and set aside.
Place egg yolks and sugar in bowl and mix with wire wisk for until well mixed and slightly thickened. Gradually add the half and half and continue to mix until well blended.
Return half and half mixture to medium saucepan and cook on low heat until small bubbles form around the edge and mixture is steaming, stirring constantly. Do not boil!
Transfer half and half mixture into a bowl and add whipping cream, vanilla, cinnamon, and salt. Cover and chill thoroughly (overnight is best).
Mix in your ice cream maker as per instructions! Serve on a fruit crumble or fresh fruit!
